Hideko Kawa is one of Britain’s top dessert chefs and an extraordinary preserve maker, Gold and Silver medal winner in the artisan category of the World Marmalade awards with her rare combination of extraordinary flavour and fruit combinations prepared with skill and style. Former pastry chef to Gordon Ramsay, Heston Blumenthal, and Hélène Darroze, Hideko will be joining us at World Marmalade Festival 18-19 March at Dalemain in Cumbria with two events:

Saturday 18th March
Yuzu and Japanese Citrus Marmalade
10:45am-11:45am in the Dalemain House Kitchen, a demonstration with Q&A
The most fashionable citrus flavour right now is Japan’s Yuzu, celebrated by top chefs though to the UK’s favourite Mary Berry. Learn with Hideko how to cook with Yuzu, taste marmalade made with it and see how to add alcohol like Sake can be added to your marmalade, and discover how citrus fruit are used in Japanese cooking.

Sunday 19th March

Brilliant Chocolate Citrus Preserves & BonBons, with Hideko Kawa & Cacao Barry
2:00pm-3:00pm in the Dalemain House Kitchen, a demonstration with Q&A
Learn how to combine the finest chocolate with marmalade for an utterly smooth or textured finish, discover different chocolate varieties like Cacao Barry Alto El Sol 65% couverture that perfectly pairs with citrus flavours, then watch Hideko making delicate chocolate orange bonbons.
